Today Kati and I made SIX WEEK MUFFINS - of course they probably won't last six weeks! I left my recipes at home so turned to my favorite source of info - the world wide web - I love that place!!!!
Preheat 375 degrees and bake for 17-20 minutes.
Combine dry ingredients as follows in a large bowl
5 t. of baking soda
1 t. salt
1 cup of flour
mix well and then add
4 cups flour
15 ounces bran cereal ( we used raisin bran)
2 cups sugar
Now combine in a smaller bowl
1c. vegetable oil
4 eggs
4 cups of buttermilk
Add liquid to dry and mix to combine but do not over mix.
You can now bake desired amount of muffins in pan.
Put the remaining mix into a container that can be tightly closed and store in the refrigerator until you want ---more muffins.
Makes about 4 dozen normal sized muffins.
We have added bananas, nuts, applesauce to small batches before baking.
