Mix together dry ingredients large bowl
1 cup whole wheat pastry flour
1 cup unbleached white flour
4T. baking powder
2T. sugar
1/2 t. salt
In a smaller bowl, mix together
1 cup buttermilk
1/2 cup pureed pumpkin
Mix wet ingredients into dry ingredients enough to combine. Do not over mix.
Drop by spoonfuls onto greased cookie sheet
Bake 375 degrees about 18 minutes.
Makes 12 biscuits
and if you are a weight watcher 2 biscuits are 3 points.
You can of course, pat out the dough to make cut out biscuits.
I also used whole wheat graham flour by Hodgson's Mill and white whole wheat flour because that is what was in the house.
