I needed to use up the bananas I took to the hospital on Saturday thinking I would need something for lunch and dinner. Ha Ha Ha - never had time to eat, or to drink or go to the bathroom either. When I got home I found some slightly black bananas in my doula bag so I figured banana bread was in order.
I think by adding the pumpkin I might be able to reduce the oil to 1/4 cup and perhaps add some buttermilk to bring it up to 1/3 cup total. I already reduced the total sugar from 1 cup to 1/2 cup. There was no effect on how much the bread would normally rise.
There are also lots of other "stuff" you can add or substitute: grated apples or apple sauce, grated zucchini, dates, pineapple.
